Recipes are an evolving thing. You also have to adapt to the changing condition of your ingredients. If the recipe calls for 5 eggs and the eggs you have are small, then add 6 or 7. Try to use fresh spices. It doesn't cost a lot more and can make a big difference in flavor. We like to think of breakfast as entertainment as well as a chance to "feed the face". When we first started in this business, I quickly discovered that low fat and low calorie equaled low flavor. So if you substitute skim milk for good old half and half or margarine for real butter, don't expect it to taste as good as it would with the "real thing". Use things that are in season. I buy strawberries every week of the year. Sometimes I pay 99 cents a quart and sometimes I pay $6.99 per quart. As you might imagine, the least expensive ones are the best. If the grapefruit are cheap, they are probably in the height of season and very good. We have made an attempt at humor in the cookbook, so don't think everything is totally serious. For instance, the nutritional labeling info is probably not exactly correct. We would like to acknowledge our guests who ate the previous versions of these recipes.
